When the CSA delivered this glorious assortment I knew that I would need to get busy with the apples. I discovered that the way you make a sublime apple pie is by using equal amounts of different kinds of apples. I won't go on about how easy this is if you're the sort who makes their own crust. Because I don't think making crusts is easy. But if you, like me, buy ready made crusts, then this is really easy. And whichever way you do it this pie will knock the socks off.
Sublime Apple Pie
- 3 Tbs all-purpose flour
- 1 tsp grated lemon zest
- 1 tsp pumpkin pie spice
- 1/8 tsp salt
- 2/3 cup sugar
- 21/2 pounds assorted apples (about 5) peeled, cored and sliced into rings
- 1 Tbs fresh lemon juice
- Pastry Dough for a double crust pie
Put a large baking sheet in the oven (middle rack) an pre-heat to 425. Whisk together flour, zest, spice, salt and sugar. Gently toss with apples and lemon juice. Roll out your pie dough into a 9-inch pie pan. Spoon in apple filling. Cover with second sheet of pastry dough. Cut three small slices (vents) on top for the steam to escape. Bake pie on hot baking sheet for 20 minutes then reduce temperature to 375 and bake for another 40 minutes. Cool pie for a few hours.
